Elizabeth (Beth) Wilson Jukes died January 15 at age 95, a resident of Carol Woods Retirement Community for the past 27 years. She was born in Boston, Mass, the only child of Bertha Wilson Jukes, and Henry Jukes. Beth received a BS and MS from Simmons College. She was a nutrition consultant at the Michigan State Health Dept 1946 – 1953, and then with the Michigan Cooperative Extension Service until 1958. Beth became the Chief Nutritionist at the NC State Board of Health 1962- 68, and a Nutrition Consultant at Human Development Associates until her retirement. A highlight of her time at the State Board of Health was leading a federally funded randomized study of the nutritional status of children that uncovered a high level of malnutrition. This study contributed to the eventual development of the Federal WIC program and school supplemental meal programs.
Beth was very active in her church wherever she lived; in NC at Pullen Memorial, Raleigh, then at Binkley Baptist in Chapel Hill. She loved her dogs especially Lambie. She dug into gardening and traveled to every continent except Antarctica, twice to Australia. She did some remarkable hikes among the mountainside rice paddies in the Philippines, and in the foothills of the Himalayas in Nepal. At home she was head of the kitchen team and produced delicious meals, sometimes making her superb brownies. Her favorite place in the US was Sedgwick, Maine, where her mother grew up, and her grandfather had been a sea captain who sailed the Orient trading route.
Beth is survived by Janet Campbell and her sisters Sally Hansen and Buffy C. Campbell and their children, her cousin Irma Jukes of Exeter, NH, and second cousin, Cris Schamp of Arrington, VA.
She received wonderful care and support from the entire Health Center staff - nursing, well-being, PT, dietary, housekeeping.
A memorial service will be held at Carol Woods on Saturday, February 11, at 2 PM in the Carol Woods Assembly Hall. Contributions may be made to the Carol Woods Campus Enhancement Fund, 750 Weaver Dairy Rd, Chapel Hill, NC 27514.
